For me it's definitely the original Bubblegum Crisis OVA. It was one of my first anime growing up and I have watched it again countless times over the years. It never gets old for me. Hurricane! is one of my all-time favorite anime songs (along with Mad Machine) and I get excited everytime I hear it juxtaposed with what has to be the best opening sequence to an anime ever: You've got a rogue boomer on the loose tearing up the AD Police, you got Priss and the Replicants rocking out, then you got the other Sabers gathering for battle--all this leading up to a kickass fight scene where they trash that troublesome boomer. So awesome. :P The second episode is just as memorable with Mad Machine playing. They just don't make OVA's like that anymore. Except... maybe Karas. That was an impressive opening.
Anyway, I haven't seen Parasite Dolls or the AD Police Files OVA yet (though I own the latter), but I can't imagine they'll take the place of BGC. Then there's 2040 which, surprisingly, I didn't really like. I was quite disappointed by the character/voomer designs, the color palette, and really the story as a whole. It was way too "out there" for me... I mean Sylia was just a freak, Priss and Leon's flirtatious relationship was awkward and uncomfortable (where in the original it was humorous--as it should be), and the ending bugs me to no end. For me, they really dropped the ball on a remake, but I'm glad so many others liked it. At least in that respect it wasn't an utter failure.
Finally, the ADP TV was a fun little spinoff that I got some kicks from, but I have to agree with ?????????'s assessment. The plot was weak and it did suffer from a low budget. But...
