That's too much of a broad question. But when it comes down to orchestrated soundtracks, if you can come up with themes people remember, there's a step forward in the right direction. Also, something that strikes emotion in people is also good... and other stuff, can't think at the moment,

What qualities in a score make someone want to hug the tv when they're done watching? I'm asking because I just finished watching fate/stay night, black lagoon, and but load of others and there was this emotional impact that just blew me away, but I didn't know why.

Who said blood is a bad thing? I like red too and often say because it's the colour of blood... but then we couldn't live without blood now could we, so a seemingly negative thing is actually a positive.

Red is a warm colour, fiery and passionate and evocative. Blue is a cool colour, calming and serene, but chilling. Red draws the eye into an image, whereas blue tones lead it away. If we're going to argue colour interpretations, based on what little I remember of colour theory XP
As for music, I find it depends on how appropriately the music matches the anime/film/show/whatever, i.e. I love Red Fraction as Black Lagoon's opening theme and AS Sekiria's music for BGC2040, because they just fit the punky aggressive tone of those animes. I also love the orchestral scores of some movies i.e. The Fountain, most anything by Hans Zimmer, since classical scores are timeless and can draw upon the full range of human emotions, from the deepest calling sorrow to the thundering pieces that make your blood roar in your veins. Some soundtracks don't quite create the right mood and sound crap, others do it so well that they can almost dictate your emotion, and while individual soundtracks or composers may be popular, whether a soundtrack is good or not is purely subjective.

And for some reason that whole thing with Blue, Kim and myself felt like some strange Macross type love triangle gone wrong lol.

Although plot and dialogue are important, it's the music that indicates how we are supposed to react/feel at specific moments during a movie...if you change the soundtrack, you alter the impact and the experience.
To explore the varying levels of emotional intensity that a good soundtrack can provide, try watching a movie (etc.) that you're very familiar with while listening to something completely unrelated...a good and easy example is The Wizard Of Oz backed by Pink Floyd's Dark Side Of The Moon.
I also did this with Dr. Seuss' The Lorax while listening the Hum album Downward Is Heavenward. Now that was goddamn EPIC.
