Siege of the North is an excellent two-parter I honestly can't tell you which episode is my absolute favourite, since some of them are amazing for their plot and scale, and others I love because of the characters (*coughcough*TheBlindBandit*coughcough*)
The bending stances and the fights themselves are what first attracted me to watching this show. According to the anonymity of the intarwebs:
Earth benders' moves are based on the Hung Gar style of Kung Fu.
Fire benders' moves are designed along the lines of Northern Shaolin Kung Fu.
Water benders' moves are based on Tai Chi positions.
Aang's airbendering is apparently based on a fighting style called Ba Gua.
