Although plot and dialogue are important, it's the music that indicates how we are supposed to react/feel at specific moments during a movie...if you change the soundtrack, you alter the impact and the experience.
To explore the varying levels of emotional intensity that a good soundtrack can provide, try watching a movie (etc.) that you're very familiar with while listening to something completely unrelated...a good and easy example is The Wizard Of Oz backed by Pink Floyd's Dark Side Of The Moon.
I also did this with Dr. Seuss' The Lorax while listening the Hum album Downward Is Heavenward. Now that was goddamn EPIC.
