Firstly, mp3s can only output audio, not video. Also, everything is already digital and we already have systems where you can purchase movies as files that you can download to your PC or media devices, etc. What you're talking about has already existed, both legally and illegally for a long time now.
But there are reasons why these methods aren't very good. Firstly, hard drives only get so large, and we're moving into High Definition media which makes movies a lot larger to the point where they take up 20gigs of space. Having your movies on media discs allows people to handle and file their movies on a real world level, which most people prefer. It also allows you to have hundreds of gigs worth of movies without having to buy hard drives to store those hundreds of gigs worth of movies... and so on.
DVDs can only store around 8.5 to 9GB worth of data and you can only store standard or enhanced definition media on it.
Bluray can store 25, 50, 100+ GB worth of data and can play High Definition media upto 1080p which is the highest quality video you can get. Sound is also improved over DVD since you have so much space you can have uncompressed full surround audio on Bluray, yada, yada, yada...
And for those wondering why I didn't bother to mention HD-DVD, it's getting pretty obvious that HD-DVD won't be surviving very long.
